Cheese Yield Chart Using Milkfat and True Protein
 

The change to True Protein in federal milk marketing orders is resulting in a strong move to true protein pricing by plants offering cheese yield pricing programs. The chart below shows the amount of Cheddar cheese in 100 pounds of milk at various component levels. This table uses a modified Van Slyke Cheddar formula using 90% fat recovery, a casein to fat ratio of 0.64:1, and 38% moisture cheese. Different plants may use a different formula, depending on the type of cheese, fat recovered in cheese, the casein-to-fat ratio, and cheese moisture levels.

Note that the cheese yield does not increase as you look down the shaded columns in the chart below. Once the casein-to-fat ratio drops below 0.64:1, cheese yields do not increase with increased fat content. This is because the amount of milk protein available limits the amount of fat useable in cheese. The value of this additional milkfat is based on the butter price, rather than the cheese price. Some plants do not adjust for the casein-to-fat ratio because they need the all of the producer milkfat available to manufacture the type of cheese they are making.
